Fruit-filled Jam Thumbprint


This is fruit-filled jam thumbprint from Peter Reinhart's Artisan Bread Every Day. I made 1/3 recipe.

Mixed dough, after overnight resting in the fridge.


Divide the dough into little balls weighing.... I use the scale for this. I want them to be the same size. They looked pretty cute, don't you think? :)


I placed the pan in the microwave for rising. I like to use microwave because it's small and enclosed. The half sheet pan's width fits just right in.

I was supposed to let it rise for an hour but we went for a long walked and ended up coming back after an hour and a half. Add another half an hour of waiting while the oven preheat - the little dough balls rose for a total of 2 hours! They looked a bit big - definitely more than 2x size. Whoops...


While the oven was preheating, I made the slurry and prepare the dough with the filling.With a wet thumb push the dough in the middle and rotate the thumb to make a space wide enough for the blueberry filling.


Purrrty rolls :).

I had some of them for breakfast and shared the rest with friends. They are better slightly warm so I popped them in the microwave for a few seconds.
