Alpha Bakers: Molasses Crumb Cakelets


If there is one recipe I am least excited about in this book, this is it. The picture looks really cute and I love the crumb topping as decoration. But a cake that is mostly made of molasses? Eww.

I made 1/2 recipe of this. I was tempted to make 1/4 but 1/2 recipe portion seem small and I want to give the recipe a chance to surprise me.

I have an old bottle of molasses from when we baked through Rose's Heavenly Cakes. They still smell like molasses and still slow like molasses. After a brief consultation with my good friend, Google, I found that molasses doesn't really go bad. Unless of course if you see dangerous things like mold or if it crystallized. Mine has no sign of either so I used it.

This cake is really easy to put together. It was super quick. The longest time spent on this cakelet was weighing each muffin pans with 17 grams of batter. This took longer than putting the batter together.



Taste-wise, it turned out worse than I expected. I don't like it. At all. It tasted like straight up molasses, which is not really surprising considering that is the name of the cake and the main ingredient. I had a very small bite from one of the cakelets and quickly swallowed it and drank something afterwards.

I am sad to say that I threw out the rest. I thought of sending it to the office with hubby but the I can't bear the thought of serving something that I can't even eat to others.

Separate out 40 grams for crumb topping.


Add molasses, water, and baking soda and mix on low speed for a minute.


Batter in pan.


Baked.

  1. Jenn, I was so excited to see your post, but how sad that you didn't like them! People are all over the board with this recipe, but Faithy was like you--she made a half recipe and wished she had made 1/4--or less. I didn't take mine to work for the same reason as you--I wasn't 100% behind them. Fortunately, Jim likes them.

    1. I was sad I made an appearance for something I don't like. That's ok though, at least I tried it. You're lucky Jim likes them. It was really sad throwing it away....

  2. Hi Jenn! I'm so glad that you are with us for this week! Whenever I make 1/2 recipe I would think of you. This time round, I wished I made 1/4 recipe. I didn't like them as much either... I didn't give them away for the same reason as you too.

  3. Hi Jenn - I liked the batter, but then when the cakelets manifested I had underbaked them and I didn't like the consistency. I don't like muffiny things, like bran muffins, etc., so I chalked it up to that. I thought a little orange zest might help, or baked more, warmed up w a little butter or jam --- I love the little shape. But let's face it, for me, if I want to serve, make and serve that is, something special for a little event, there are just too many wonderful tiny things to do - even just divine financiers. So I would vote no for a rebake of this.

  4. Yay you're back! So sorry you didn't like these cakes, we would have happily eaten all of yours too :) Your photos are gorgeous and I love the setting with the yellow cups and the square of burlap. So professional!

  6. Ok, loving your cake stand. Rats that the hubs has put a "hold" on any more cake stand purchases around these parts... or else I would totally search and buy.

    1. How many cake stands do you have? My hubby bought me this one and now I have 3. I think I am good coz I don't use them that often. Chica, where you been? Have not seen you post for a long while.

  8. You did a great job photographing something you didn't even like!! What terrific step by step photos. I loved these little cakes. Maybe I am in the minority?
